“At Sulair we only use the finest quality seasonal ingredients available to us, sourced locally where possible. We try to avoid gimmicks and pretention’s and make our food accessible to all who come to the restaurant and concentrate purely on the flavour and the quality of the ingredients.
The ethos of our cooking is based on using classic and modern French and European techniques married together with the finest local, Scottish and wild ingredient’s. Some of the dishes are reinterpretations of old classics while others are more challenging and unusual, but my hope is that you are willing to explore some of these new flavours and ingredients.”
